
8 cups chopped romaine lettuce
2 cups chopped cooked chicken
1 can Mandarin Oranges
1 large avocado, peeled and chopped
1/2 cup chopped cilantro
4 green onions, cut
1/3 cup roasted, salted peanuts (almonds are also good)
Layer greens, chicken, cucumber, oranges, avocado, green onions and cilantro. Top with peanuts and wonton strips. Drizzle with dressing and serve.
Ginger Soy Dressing
4 T. rice vinegar
4 T. sugar or Splenda to taste
2 T. soy sauce
1 t. grated fresh ginger or 1/4 t. dried ginger
2 T. canola oil ( I have found Sesame oil at the Chinese market that might be good in this)
1/2 t. black pepper
pinch of salt
Whisk all dressing ingredients in a small bowl.
