Bacon Craisin Salad

2 pkgs. Leaf lettuce
1 (8 oz.) Pkg. Shredded mozzarella cheese
1 (8 oz.) Pkg. Shredded parmesan cheese
1 lb. Bacon cooked and crumbles
1 (8 oz.) Pkg. raisins
1 cup sliced almonds
1 recipe Craisin salad dressing


Mix all ingredients together.  Make dressing and mix in till coated.

Dressing:
½ cup red wine vinegar
1 cup sugar
½ onion, chopped
1 ½ tsp. Salt
1 cup salad oil
2 tsp. Mustard

Mix in blender all ingredients except oil.  Add oil and blend again.

Corn Salsa

Someone made this at the activity too, so I thought that I would add it now too.  Love this!

2 Avocado
1-2 Tomatoes, chopped
1 can Blackeye Peas (I use black beans)
2 cans Corn
1/2 Onion, chopped (I use green onion very thinly sliced)
Cilantro
Jalapeno (just a little bit)
1 packet Italian Seasoning Dressing powder (Good Season brand: Follow instructions using all the vinegar and half the oil)

Chicken Almond Salad


2-3 cups cooked chicken, diced
1 1/2 cups diced celery
1 apple (unpeeled), cored and diced
1 cup drained pineapple tidbits
3 Tbsp. lemon juice
1 1/2 tsp. salt
1 tsp. dry mustard
Pepper to taste
1/4 – 1/2 cup light cream, or half and half
1 1/4 cups Greek yogurt *can substitute with mayo but it was wonderful with the yogurt!
1 cup sliced almonds

Combine chicken, celery, and lemon juice.  Chill for 1 hour.  Add drained pineapple, apple and almonds.  Combine mustard, salt, pepper, cream and mayo.  Toss lightly over chicken mixture.

Sweet Coleslaw Salad


1 cup mayonnaise
1/4 cup pineapple juice
1 can pineapple tidbits
1/8 cup cider vinegar
1/2 cup sugar
1/2-1 head shredded cabbage
Celery seed to taste
Mix and love!

Oh What do I Make in the Summer Time

I went to a relief society activity yesterday and it was really cool.  They assigned ten people to bring a salad and ten people to bring a dessert.  We sat outside in the beautiful weather and just visited.  It was fun and layed back, my kind of activity.  Anyways, we got to try all of the recipes and then take the recipes for them home.  So, I have several new recipes that I thought I would share with you this summer and I know in the summer we are all trying to keep the house cool by not using the oven and going to ward and neighborhood parties.  Now, we will all have new recipes to take.  I am only going to put in the ones that I REALLY liked so that you know they are good!  I have about 5 that I loved and I'll probaby space them out over the summer so that I feel like I am adding to the blog regularly :)

If any of you have some you would like to add please, PLEASE email them to me.  I'd like to get some new recipes on there.  I  have dreams of us all sitting around sharing and tasting each others recipes in the sun, with butterflies flying around us, but since we can't do that I would still like to add recipes to the blog and no one ever sends me any.  SENT ME RECIPES!  Lets do some fun summer ones right now.
